These banana muffins are not only moist and delicious but also easy for kids to help make. They’re perfect for using up ripe bananas and can be enjoyed as-is or with added walnuts or chocolate chips for extra flavor.

Ingredients:
- 1 large egg
- 1 teaspoon baking powder
- 1 large ripe banana, mashed
- ½ teaspoon salt
- ⅓ cup white sugar
- 1 teaspoon baking soda
- 3 large ripe bananas, mashed
- 1 ½ cups all-purpose flour
- ⅓ cup melted butter
Method:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners. In a bowl, sift together flour, baking powder, baking soda, and salt; set aside.
- In a separate large bowl, mix bananas, sugar, egg, and melted butter until well combined. Fold in the flour mixture until smooth. Spoon the batter into the prepared muffin cups, filling each 2/3 full.
- Bake in the preheated oven until the tops spring back when lightly pressed, about 25 to 30 minutes. Cool briefly in the tin, then transfer to a wire rack to cool completely.
Notes:
For extra flavor and texture, consider adding chopped walnuts or chocolate chips to the batter before baking the muffins. Enjoy!
