Serves: makes 12 muffins

Ingredients:

  • 1 large egg
  • 1 teaspoon baking powder
  • 1 large ripe banana, mashed
  • ½ teaspoon salt
  • ⅓ cup white sugar
  • 1 teaspoon baking soda
  • 3 large ripe bananas, mashed
  • 1 ½ cups all-purpose flour
  • ⅓ cup melted butter

Method:

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners. In a bowl, sift together flour, baking powder, baking soda, and salt; set aside.
  2. In a separate large bowl, mix bananas, sugar, egg, and melted butter until well combined. Fold in the flour mixture until smooth. Spoon the batter into the prepared muffin cups, filling each 2/3 full.
  3. Bake in the preheated oven until the tops spring back when lightly pressed, about 25 to 30 minutes. Cool briefly in the tin, then transfer to a wire rack to cool completely.

Notes:
For extra flavor and texture, consider adding chopped walnuts or chocolate chips to the batter before baking the muffins. Enjoy!
