Black Forest Gateau


Black Forest Cake, known in Germany as Schwarzwälder Kirschtorte, is a luxurious dessert featuring layers of moist chocolate cake, whipped cream, and cherries, traditionally laced with Kirschwasser (a cherry brandy). It’s a rich and indulgent cake that’s both a visual and taste delight.

  1. For the Cake:
    • 3/4 cup all-purpose flour
    • 1/2 cup unsweetened cocoa powder
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 4 large eggs
    • 1 cup granulated sugar
  2. For the Filling:
    • 2 cups cherries, pitted (can use canned or fresh)
    • 1/4 cup Kirschwasser (cherry brandy), optional
    • 2 cups heavy cream
    • 1/4 cup powdered sugar
    • 1 teaspoon vanilla extract
  3. For Garnish:
    • Chocolate shavings
    • Whole cherries


  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Sift together flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, beat eggs and granulated sugar until thick and pale. Gradually fold in the dry ingredients.
  4. Divide the batter between the prepared pans and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow cakes to cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  6. Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
  7. Slice each cake layer horizontally to create four layers. Sprinkle each layer with Kirschwasser (if using), then spread with whipped cream and top with cherries.
  8. Stack the layers, then cover the outside of the cake with whipped cream. Garnish with chocolate shavings and whole cherries.


  • If you prefer a non-alcoholic version, omit the Kirschwasser or replace it with cherry syrup.
  • Ensure the cake layers are completely cool before assembling to prevent the whipped cream from melting.
  • The cake tastes best when allowed to set in the refrigerator for a few hours before serving.
