Preparation Time: 15 minutes

Total Time: 32 minutes
Serving: 4

  • 1/2 cup (115g) unsalted butter
  • 4 ounces (115g) bittersweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (50g) sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

  1. Preheat Oven and Prepare Molds:
    • Preheat your oven to 425°F (218°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.
  2. Melt Chocolate and Butter:
    • In a double boiler over simmering water, melt the chocolate and butter together until smooth. Remove from heat and let cool slightly.
  3. Whisk Eggs and Sugar:
    • In a medium bowl, whisk together the eggs, egg yolks, and sugar until thick and pale. Mix in the vanilla extract.
  4. Combine Ingredients:
    • Fold the melted chocolate mixture into the egg mixture. Then sift in the flour and salt, gently folding until just combined.
  5. Bake:
    • Pour the batter into the prepared ramekins, filling them about three-quarters full. Place on a baking sheet and bake for 12 minutes, or until the edges are firm but the center is soft.
  6. Serve:
    • Let the cakes rest for 5 minutes out of the oven. Carefully invert each onto a plate, and serve immediately to enjoy the molten center.

  • The key to perfect lava cakes is not overbaking; the center should be quite soft when taken out of the oven.
  • Serve with a dusting of powdered sugar, a scoop of vanilla ice cream, or fresh berries for added flavor and presentation.
