Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 3 tablespoons instant coffee powder (adjust to taste)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 4 large egg yolks

Method:

  1. In a saucepan, combine the heavy cream, whole milk, sugar, instant coffee powder, vanilla extract, and salt. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling. Remove from heat.
  2. In a separate bowl, whisk the egg yolks until smooth.
  3. Gradually pour about 1/2 cup of the hot cream mixture into the egg yolks, whisking constantly to temper the eggs.
  4. Pour the tempered egg mixture back into the saucepan with the remaining cream mixture, whisking constantly.
  5. Return the saucepan to the stove and cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon, about 5-7 minutes. Do not let it boil.
  6. Remove from heat and strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps.
  7. Cover the bowl with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or overnight until completely cold.
  8. Once chilled, churn the custard in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  9. Transfer the churned ice cream to a freezer-safe container and freeze for at least 2 hours or until firm before serving.

Notes:
For a stronger coffee flavor, you can increase the amount of instant coffee powder, but be careful not to add too much, as it can make the ice cream bitter. Adjust according to your taste preferences.
