Cornish Pasty

  1. For the Pastry:
    • 3 cups all-purpose flour
    • 1 cup unsalted butter, cold and diced
    • 6-8 tablespoons cold water
    • 1 teaspoon salt
  2. For the Filling:
    • 1 lb beef skirt, cut into small cubes
    • 2 medium potatoes, peeled and diced
    • 1 small swede (rutabaga), peeled and diced
    • 1 medium onion, finely chopped
    • Salt and pepper to taste
  3. 1 egg, beaten (for glazing)


  1. Prepare the Pastry:
    • In a large bowl, mix flour and salt. Rub in the butter until the mixture resembles breadcrumbs. Gradually add cold water until a dough forms. Wrap in cling film and chill for 30 minutes.
  2. Assemble the Pasties:
    • Preheat the oven to 375°F (190°C). Divide the dough into 4 equal pieces and roll each into a round about 8 inches in diameter.
    • On one half of each round, layer the beef, potatoes, swede, and onions. Season with salt and pepper. Leave a margin around the edge.
    • Brush the edges with beaten egg, fold the pastry over the filling to form a D shape, and crimp the edges to seal.
  3. Bake:
    • Place the pasties on a baking sheet, brush with the remaining beaten egg, and make a small slit in the top of each to allow steam to escape.
    • Bake for 45-50 minutes or until golden brown. Allow to cool for 10 minutes before serving.


  • The key to a perfect Cornish Pasty is in the crimping; a traditional pasty should have 20 crimps.
  • For a vegetarian version, substitute the beef with additional vegetables or legumes.
  • Serve warm for the best flavor, though they’re also delicious cold.
