Method:

  1. Preheat and Prepare: Preheat your oven to 325°F (163°C). Place 6 ramekins in a large baking pan.
  2. Heat the Cream: In a saucepan, heat the cream and vanilla bean (or extract) over medium heat until it begins to simmer. Remove from heat and let it steep.
  3. Mix the Custard: Whisk together egg yolks, sugar, and a pinch of salt until the mixture is pale and thick. Gradually whisk in the warm cream.
  4. Bake the Custard: Strain the custard mixture into the ramekins. Pour hot water into the baking pan until halfway up the sides of the ramekins. Bake for 40 minutes or until the custard is set but still slightly wobbly in the center.
  5. Chill and Finish: Remove from the oven and water bath, cool to room temperature, then chill for at least 4 hours. Before serving, sprinkle sugar on top of each custard and caramelize with a kitchen torch.

Notes:

  • Ensure the water bath doesn’t boil as it can cause the custard to become grainy.
  • The caramelized sugar top should be thin, creating the iconic crisp layer.
