Ingredients:

  • 1 cup granulated sugar (for the caramel)
  • 3 large eggs
  • 1 can (14 oz) condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 tablespoon vanilla extract

Method:

  1. Prepare the Caramel:
    • In a medium saucepan over medium-low heat, melt the sugar until it’s golden. Carefully pour the hot caramel into a round baking dish, swirling to coat the bottom of the dish evenly. Set aside to harden.
  2. Mix the Flan:
    • In a blender, combine the eggs, condensed milk, evaporated milk, and vanilla extract. Blend until smooth.
  3. Bake the Flan:
    • Preheat the oven to 350°F (175°C). Pour the flan mixture over the hardened caramel in the baking dish. Place this dish in a larger baking pan and add hot water to the outer pan (about halfway up the sides of the flan dish).
    • Bake for 45 minutes, or until set (a knife inserted should come out clean). Remove the flan from the water bath and let cool to room temperature, then refrigerate for at least 4 hours.

Notes:

  • Ensure the caramel is not too dark, as it can become bitter.
  • The flan can be made a day ahead and kept refrigerated until serving.
  • Run a knife around the edges of the flan before inverting onto a plate to serve.
