Ingredients:

  2. 8 ounces of smoked bacon, chopped

  4. 4 large eggs

  7. 1/4 teaspoon ground black pepper
  8. A pinch of nutmeg
  9. 1 tablespoon butter (for sautéing)

Method:

  1. Pre-bake the Crust:
    • Preheat your oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish. Prick the bottom with a fork, line with parchment paper, and fill with pie weights or dried beans. Bake for 8-10 minutes, then remove weights and parchment and bake for another 5 minutes. Set aside to cool.
  2. Prepare the Filling:
    • In a skillet, melt butter over medium heat. Add chopped bacon and cook until crisp. Remove bacon and set aside, leaving the rendered fat in the skillet.
  3. Combine Ingredients:
    • In a large bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg until well combined. Stir in the cooked bacon and grated Gruyère cheese.
  4. Assemble and Bake:
    • Pour the filling into the pre-baked crust. Bake at 375°F (190°C) for 25-30 minutes, or until the filling is set and the top is golden brown.
  5. Serve:
    • Let the quiche rest for 15 minutes before slicing. Serve warm or at room temperature.

Notes:

  • For a lighter version, half-and-half can be used in place of heavy cream.
