Ingredients:

  • 1 (10-ounce) sirloin steak, thinly sliced
  • 1 pound fresh green beans, cut into pieces
  • 2 bell peppers, cut into strips
  • 8 teaspoons minced garlic
  • 4 tablespoons sugar
  • 6 tablespoons soy sauce
  • 3 tablespoons fresh lime juice
  • 1 teaspoon dried crushed red pepper
  • 4 tablespoons peanut oil, divided
  • 2 teaspoons cornstarch
  • 3 cups hot cooked rice

Method:

  1. Combine the marinade ingredients (4 tablespoons sugar, 6 tablespoons soy sauce, 3 tablespoons fresh lime juice, 1 teaspoon dried crushed red pepper, and 8 teaspoons minced garlic).
  2. Gradually whisk in 3 tablespoons of oil; transfer to a large zip-top plastic bag.
  3. Add the steak; seal and let stand at room temperature for 15 minutes.
  4. Pour the steak and marinade into a bowl.
  5. Transfer the steak to a wok, reserving the marinade.
  6. Stir-fry the steak in 1 tablespoon of oil over medium-high heat for 1 1/2 minutes or until browned.
  7. Remove the steak.
  8. Add the beans and bell peppers to the wok; stir-fry for 3 minutes.
  9. Whisk the cornstarch into the reserved marinade.
  10. Stir the cornstarch mixture into the vegetable mixture.
  11. Stir-fry for 30 seconds or until the sauce thickens.
  12. Stir the steak into the vegetable mixture and stir-fry for an additional 30 seconds.
  13. Remove from heat and serve over rice.

Notes:
To make slicing the steak easier, place it in the freezer for about 30 minutes to firm it up slightly. This will make it easier to slice thinly across the grain.
