Gingerbread Cookies

Great for quick holiday baking and gift-giving, these soft cookies are super easy to make anytime. If you want a stronger flavor, you can add two teaspoons of ginger, but keep in mind that store-bought spice cake mixes are already pretty flavorful.

Ingredients:

  • 1 (15-ounce) package of Spice Cake Mix
  • 1/3 cup of vegetable oil
  • 1 1/2 teaspoons of ground ginger
  • 1 large egg
  • 1/4 teaspoon of ground cloves
  • 1/4 cup of molasses

Method:

  1. Begin with preheating the oven and set the temperature to 350 degrees F. After that take a baking sheet and place parchment paper on it.
  2. In a separate bowl, mix the cake mix with some ginger and cloves. Put the eggs, followed by vegetable oil then molasses and stir the mixture well until all are combined.
  3. For dropping dough onto the baking sheet, you can use a table spoon as well. But keep in mind to leave a space of 2 inches between two cookies.
  4. The cookies should be kept in the oven for about 10 to 12 minutes. This will help them settle down (bake properly). Before you move the baked items to a cooling tray and allow them to cool down completely, let them sit on the baking tray for about five minutes.

Notes:

For a festive touch, consider adding a sprinkle of powdered sugar or drizzling a simple icing over the cooled cookies before serving.
