Lahmacun: Savory Turkish Flatbread

Also known as ‘Turkish pizza,’ this crunchy flatbread topped with flavorful spiced mincemeat is a favorite street food enjoyed across the Middle East. Try Lahmacun for a delicious bite that combines the goodness of seasoned minced meat and herbs, baked to perfection.

Ingredients:

For the Dough:

  • 500g strong white bread flour
  • Cornmeal or semolina flour, for dusting
  • 7g dried fast-action yeast

For the Topping:

  • 250g beef mince
  • 2 tbsp olive oil
  • 4 spring onions, finely chopped
  • 2 ripe tomatoes
  • 2 green chillies
  • Bunch of flat-leaf parsley, ¾ finely chopped, ¼ roughly chopped
  • 2 tsp chilli pepper flakes
  • ½ lemon
  • Pinch of ground cumin
  • 1 tsp allspice
  • ½-1 medium red onion, finely sliced

Method:

  1. Sift flour into a large bowl, create a well, and sprinkle in yeast. Pour 125ml water over yeast, flick flour over the liquid, cover, and let rise for 15 mins.
  2. Mix in 250ml water, 1 tsp salt, knead dough for 10 mins. Cover and let rise for 30 mins until doubled in size.
  3. Preheat the oven to its highest setting (about 240C/220C fan/gas 9). Sprinkle baking trays thinly with cornmeal.
  4. Pour boiling water over tomatoes, peel, chop flesh. Halve chillies, remove seeds, and finely dice.
  5. Combine tomatoes, chillies, spring onions, finely chopped parsley, beef mince, spices, salt, and pepper in a bowl. Mix well.
  6. Take the risen dough, knead briefly, divide into four pieces, shape into balls. Roll each into a thin circle on prepared baking trays.
  7. Spread a thin layer of the meat mixture on each circle.
  8. Bake each flatbread for 10-15 mins until edges darken.
  9. After removing from the oven, sprinkle with roughly chopped parsley and sliced onion. Squeeze over a few drops of lemon juice. Serve immediately.

Notes:

  • To achieve a crispier texture in your Lahmacun, ensure the baking trays are thinly coated with cornmeal before placing the rolled dough.
