  • 3 large eggs
  • ¾ cup white sugar
  • ½ cup unsalted butter
  • ¾ cup fresh lemon juice
  • 1 tablespoon grated lemon zest


  1. Mix lemon juice, sugar, butter, eggs, and lemon zest in a 2-quart saucepan.
  2. Cook over medium-low heat, whisking constantly to avoid curdling, until the mixture thickens and bubbles come to the surface, which takes about 5 to 6 minutes.
  3. Take the saucepan off the heat; transfer the curd to a large bowl and cover it with plastic wrap to prevent a skin from forming. The curd will continue to thicken as it cools. Keep it in the refrigerator.

Lemon curd freezes exceptionally well. You can freeze it for up to one year. When you’re ready to use it, simply thaw it in the refrigerator for approximately 24 hours.
