  1. 6 large eggs
  2. 1 cup of granulated sugar
  3. 1 cup of all-purpose flour, sifted

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Whisk Eggs and Sugar:
    • In a large mixing bowl, whisk together the eggs and granulated sugar until the mixture is pale, fluffy, and has doubled in volume. This may take about 5-10 minutes with an electric mixer on high speed.
  3. Fold in Flour and Lemon Zest:
    • Gently fold in the sifted flour to the egg mixture, a little at a time, to avoid deflating the batter. If using, fold in the lemon zest. Mix until just combined, maintaining a light, airy texture.
  4. Bake:
    • Pour the batter into the prepared cake pan. Bake for 30 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  5. Cool and Serve:
    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving.
