Broccoli Cheese Soup

Prepare a rich and creamy soup by simmering broccoli and onions in vegetable stock. The result of this soup is very velvety and perfect for winter treats.

Ingredients:

  • 4 cups chopped broccoli
  • 1 ½ cups vegetable stock
  • 3 cups shredded cheddar cheese
  • Salt and pepper to taste
  • ¾ cup heavy cream
  • 1 small onion, diced
  • 1 teaspoon minced garlic

Method:

  1. In a saucepan over medium heat, mix vegetable stock, broccoli, onions, and garlic. Stir for almost 5 minutes until it reaches a boil.
  2. Cover and let simmer for almost 10 minutes.
  3. Mix in cream and continue to cook for 3 to 5 minutes.
  4. Season it with salt and pepper to taste and enjoy!

Notes:For a creamier soup, add the cheese gradually, mixing frequently over low heat to achieve a smooth taste.
