Ingredients:

  • 4 chicken thighs, skin-on
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup green olives, pitted
  • 1 preserved lemon, thinly sliced
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Method:

  1. Season chicken thighs with salt and pepper. In a tagine or large skillet, heat olive oil over medium-high heat. Add chicken, skin-side down, and cook until golden brown, about 5 minutes per side. Remove chicken and set aside.
  2. In the same tagine, add onions and garlic, cooking until softened. Stir in cumin, coriander, cinnamon, ginger, and turmeric, cooking for another minute.
  3. Return the chicken to the tagine. Add diced tomatoes and chicken broth. Bring to a simmer, then cover and reduce heat to low. Cook for 1 hour.
  4. Add olives and preserved lemon slices to the tagine. Cover and cook for an additional 30 minutes.
  5. Let the tagine rest for 10 minutes before serving. Garnish with fresh cilantro.

Notes:

  • If you don’t have a tagine, a Dutch oven or a heavy-bottomed pot can work as a substitute.
