Ingredients:

  • 150 ml thick yogurt
  • 2 aubergines, medium
  • 3 garlic cloves, crushed
  • 1 lemon, juiced
  • Dill leaves, chopped

Method:

  1. Cut the aubergines in half lengthwise and then grill on a preheated grill for 25 minutes, turning frequently. The skin of the  aubergines will remain firm, but the flesh will be soft. After 25 minutes, remove from the heat and let them cool.
  2. With the help of a knife, scoop out the flesh of the aubergines and put into a bowl. Mash the flesh using a fork until the pulp is thick.
  3. Stir in the lemon juice, yogurt, dill, and garlic. Season and serve immediately!

Notes:

For a rich and creamier texture, beat the yogurt well before adding it to the recipe, ensuring a smoother look and taste.
