Ingredients:

  • 1 lb beef chuck (80% lean, 20% fat), finely chopped
  • 1 green chili, ground into paste
  • 2 teaspoons ginger and garlic paste
  • ¼ cup finely chopped coriander
  • ¾ teaspoon cumin powder
  • 1 onion, finely chopped
  • 2 tablespoons melted butter
  • ¼ cup finely chopped mint
  • 1 teaspoon coriander powder
  • ¾ teaspoon cayenne pepper
  • 1 teaspoon salt

Method:

  1. Preheat your oven to 450 degrees F when you are ready to bake the kebabs.
  2. In a bowl, combine the beef with coriander powder, cumin powder, cayenne pepper, salt, onion, ginger and garlic paste, mint, coriander, green chili paste, and melted butter. Squeeze the onions to drain their juice to avoid excess moisture in the beef.
  3. Mix the ingredients by hand until fully incorporated, but avoid overworking the mixture. Cover with foil and let it marinate in the refrigerator for at least an hour and up to six hours.
  4. To make the kebabs, preheat your oven to 450 degrees F. Take a large ball of the meat mixture and pierce it onto the skewer. Spread the meat along the skewer with your hands, pressing your middle finger diagonally down the beef skewer to create grooves on the kebab.To grill the kebabs in the oven, place the rack in the upper third of the oven in a roasting tin with a grill. Bake the kebabs for 20-25 minutes, rotating them as needed to brown them evenly. If the kebabs start to dry out, brush with oil as needed. However, the oven’s moisture should keep the kebabs cooking in their own juices.Once cooked, slide the kebabs onto a plate and serve with raita.

Notes:
For extra juicy kebabs, you can add a tablespoon of plain yogurt to the meat mixture before marinating. The yogurt helps tenderize the meat and adds a subtle tangy flavor.
