Strawberry Pie Recipe

  • 1 egg
  • 1 lemon zest and/or orange zest
  • 1 egg yolk
  • 1 teaspoon baking powder
  • ⅓ teaspoon salt
  • 1 teaspoon vanilla extract
  • 9 ounces fresh strawberries
  • Homemade strawberry jam, enough to cover the tart
  • 3 cups all-purpose flour
  • ½ cup + 1 tablespoon white sugar
  • ⅔ cup + 3 tablespoons cold unsalted butter
  • Egg wash, demerara sugar, and cinnamon


  1. Preheat the oven to 180°C (350°F). In a bowl, combine the dry ingredients (flour, sugar, salt, baking powder, vanilla powder, lemon and orange zest).
  2. Add the cold butter, egg, and egg yolk. Quickly mix by hand or use a food processor until a smooth ball of dough forms.
  3. Work the dough as little as possible to prevent the butter from melting and the crust from coming apart.
  4. Divide the pastry into two pieces. Optionally, chill it. Transfer one piece of pastry to a 24/26 cm tart pan and evenly spread it over the bottom with your hands. Reserve the remaining pastry for decoration.
  5. Spread enough homemade strawberry jam (approximately 250 g) over the pastry.
  6. Wash 250 g of fresh strawberries, cut them in half, and arrange them on top of the jam in the pie crust. Get creative with the decoration, such as making a lattice.
  7. Brush the pastry with egg wash and sprinkle cinnamon sugar on top.
  8. Bake for 20 minutes in a fan-assisted oven or about 35 minutes in a conventional oven. Be careful not to burn it.

For a glossy finish on your pie crust, brush it with a beaten egg mixed with a little water before baking. This will give your pie a beautiful golden color and a professional-looking shine.
