  • 2 cups all-purpose flour, plus extra for dusting
  • 1/2 cup water, at room temperature
  • 1 large egg
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 cup spinach, freshly chopped
  • 1 cup feta cheese, crumbled
  • 1/2 onion, finely chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste


  1. Start by preparing the pierogi dough. In a large mixing bowl, combine the flour and salt. Add the egg, olive oil, and gradually mix in the water until a dough forms. Knead on a floured surface until smooth. Cover and let it rest for 30 minutes.
  2. For the filling, sauté the onion and garlic in a pan until translucent. Add the spinach and cook until wilted. Remove from heat, let it cool, then stir in the crumbled feta. Season with salt and pepper.
  3. Roll out the dough on a floured surface until thin. Cut out circles using a cookie cutter. Place a spoonful of filling in the center of each circle, fold over, and press the edges to seal.
  4. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 3-5 minutes, or until they float to the surface. Drain.
  5. Serve warm with a dollop of sour cream or your favorite sauce.


  • For a vegan version, substitute the egg in the dough with 1/4 cup of unsweetened applesauce and the feta cheese with a vegan cheese of your choice.
  • Pierogi can be made in advance and frozen before boiling. Just lay them out on a baking sheet to freeze individually, then transfer to a freezer bag.
