  • 1 cup (225g) unsalted butter, softened
  • 1 cup (225g) granulated sugar
  • 4 large eggs
  • 2 cups (225g) self-rising flour, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1/2 cup strawberry or raspberry jam
  • 1 cup heavy cream, whipped


  1. Preheat and Prepare Pans:
    • Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. Cream Butter and Sugar:
    • In a large mixing bowl, cream the butter and sugar together until pale and fluffy. This can take about 5 minutes with an electric mixer.
  3. Add Eggs:
    • Beat in the eggs, one at a time, adding a tablespoon of flour with each to prevent curdling. Mix in the vanilla extract.
  4. Fold in Flour:
    • Gently fold in the remaining flour with a spatula, adding the milk to get to a soft dropping consistency. Divide the mixture evenly between the prepared pans.
  5. Bake:
    • Bake in the preheated oven for about 25 minutes or until golden and a skewer inserted into the center comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  6. Assemble the Cake:
    • Once cool, spread one layer of sponge with jam, then top with whipped cream. Place the second sponge on top and dust with powdered sugar.
