Bunny Chow is a beloved South African street food. It’s a hollowed-out loaf of bread filled with aromatic and spicy curry. Originating from Durban’s Indian community, this dish is a flavorful fusion of Indian and African culinary traditions.

Ingredients:

  • 4 small unsliced loaves of white bread
  • 500g of boneless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons of vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of grated ginger
  • 2 tablespoons of curry powder
  • 1 teaspoon of turmeric
  • 1 can of diced tomatoes
  • 1 can of coconut milk
  • 1 teaspoon of sugar
  • Salt and pepper to taste
  • Fresh cilantro (coriander), for garnish

Method:

  1. Heat oil in a large pan over medium heat. Add onions, garlic, and ginger, sautéing until onions are translucent.
  2. Add the chicken pieces, curry powder, and turmeric. Cook until chicken is browned.
  3. Stir in the diced tomatoes, coconut milk, and sugar. Season with salt and pepper. Simmer the curry on low heat for about 45 minutes until the chicken is tender and the sauce thickens.
  4. While the curry cooks, cut the loaves of bread in half and hollow out the insides, leaving a thick wall and base.
  5. Spoon the hot chicken curry into the hollowed-out bread. Garnish with fresh cilantro.

Notes:

  • You can adjust the heat level by adding more or less curry powder or by incorporating fresh chilies.
  • Substitute chicken with lamb, beef, or a vegetarian option like chickpeas as desired.
  • The hollowed-out bread pieces can be used for dipping in the curry.
