Made with potatoes, collard greens, and chorizo, Caldo Verde is a testament to the rustic and hearty cuisine of Portugal.

Ingredients:

  1. 1 lb (about 500g) potatoes, peeled and chopped
  2. 2 tablespoons olive oil
  3. 1 onion, finely chopped
  4. 2 cloves garlic, minced
  5. 6 cups (1.5 liters) chicken or vegetable broth
  6. 1/2 lb (about 250g) chorizo sausage, thinly sliced
  7. 1 lb (about 500g) collard greens or kale, thinly sliced
  8. Salt and black pepper to taste

Method:

  1. Prepare the Base:
    • In a large pot, heat olive oil over medium heat. Add the onions and garlic, sautéing until soft and translucent.
    • Add the potatoes and cook for a few minutes, stirring occasionally.
  2. Cook the Soup:
    • Pour in the broth and bring the mixture to a boil. Reduce heat and simmer until the potatoes are tender, about 20 minutes.
    • Use an immersion blender (or transfer to a blender) to puree the soup until smooth.
  3. Add Greens and Chorizo:
    • Return the pot to the heat. Add the sliced chorizo and cook for 5 minutes.
    • Add the collard greens or kale, cooking just until the greens are wilted but still bright green, about 3-5 minutes. Season with salt and pepper to taste.
  4. Serve:
    • Let the soup rest for 5 minutes to allow flavors to meld. Serve warm, drizzling a bit more olive oil on top if desired.

Notes:

  • For a vegetarian version, omit the chorizo and add smoked paprika for a similar depth of flavor.
  • Caldo Verde is traditionally served with a slice of Portuguese cornbread (broa).
