Ingredients:

For the Chicken:

  • 500 grams boneless chicken, cut into bite-sized pieces
  • 2 tablespoons cornstarch
  • 1 tablespoon all-purpose flour
  • 1 egg
  • 1 teaspoon soy sauce
  • 1 teaspoon ginger-garlic paste
  • Salt and pepper to taste
  • Oil for deep frying

For the Sauce:

  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 1 capsicum (bell pepper), diced
  • 2-3 green chilies, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce
  • 1 tablespoon tomato ketchup
  • 1 tablespoon vinegar
  • 1 tablespoon cornstarch dissolved in ¼ cup water
  • Salt and pepper to taste
  • Spring onions for garnish (optional)

Method:

Chicken:

  • In a bowl, combine the boneless chicken pieces with cornstarch, all-purpose flour, egg, soy sauce, ginger-garlic paste, salt, and pepper. Mix well until the chicken pieces are evenly coated.
  • Heat oil in a deep frying pan over medium-high heat. Once the oil is hot, add the coated chicken pieces in batches and fry until they turn golden brown and crispy. Remove from oil and drain on paper towels to remove excess oil. Set aside.

Sauce:

  • In another pan or wok, heat 2 tablespoons of oil over medium heat. Add the chopped onion, diced capsicum, and green chilies. Stir-fry for a few minutes until the vegetables are slightly softened.
  • Add soy sauce, chili sauce, tomato ketchup, and vinegar to the pan. Stir well to combine.
  • Pour in the cornstarch mixture (cornstarch dissolved in water) while stirring continuously. This will help thicken the sauce.
  • Season with salt and pepper to taste. Allow the sauce to simmer for a few minutes until it thickens to your desired consistency.
  • Once the sauce has thickened, add the fried chicken pieces to the pan. Toss gently until the chicken is well coated with the sauce.
  • Garnish with chopped spring onions, if desired.
  • Serve hot with steamed rice or noodles as a delicious Indo-Chinese meal.
