Ingredients:
- 8 ounces of flat rice noodles
- 2 tablespoons of vegetable oil
- 1 pound of shrimp or chicken, sliced
- 2 cloves of garlic, minced
- 2 eggs
- 1 cup of bean sprouts
- 1/2 cup of crushed peanuts
- 3 green onions, chopped
- 1 lime, cut into wedges
- 1/4 cup of tamarind paste
- 2 tablespoons of fish sauce
- 1 tablespoon of brown sugar
- 1/2 teaspoon of chili flakes (optional)
Method:
- Soak rice noodles in warm water for 15-20 minutes until soft. Drain and set aside.
- Heat oil in a large skillet or wok over medium-high heat. Add garlic and stir-fry for a minute. Add shrimp or chicken and cook until done.
- Push the protein to one side of the pan. Crack eggs into the pan and scramble. Once cooked, mix with the protein.
- Add noodles, tamarind paste, fish sauce, brown sugar, and chili flakes. Stir-fry everything together until well combined and noodles are heated through.
- Turn off the heat and mix in bean sprouts and green onions.
- Serve hot, garnished with crushed peanuts and lime wedges.
Notes:
- Tamarind paste can be substituted with a mix of vinegar and sugar for a similar tangy flavor.
- Vegetarians can substitute the protein with tofu and use soy sauce instead of fish sauce.
- Adjust the level of spiciness with chili flakes to suit your taste.
