Serving: 4

Ingredients:

  • 8 ounces of flat rice noodles
  • 2 tablespoons of vegetable oil
  • 1 pound of shrimp or chicken, sliced
  • 2 cloves of garlic, minced
  • 2 eggs
  • 1 cup of bean sprouts
  • 1/2 cup of crushed peanuts
  • 3 green onions, chopped
  • 1 lime, cut into wedges
  • 1/4 cup of tamarind paste
  • 2 tablespoons of fish sauce
  • 1 tablespoon of brown sugar
  • 1/2 teaspoon of chili flakes (optional)

Method:

  1. Soak rice noodles in warm water for 15-20 minutes until soft. Drain and set aside.
  2. Heat oil in a large skillet or wok over medium-high heat. Add garlic and stir-fry for a minute. Add shrimp or chicken and cook until done.
  3. Push the protein to one side of the pan. Crack eggs into the pan and scramble. Once cooked, mix with the protein.
  4. Add noodles, tamarind paste, fish sauce, brown sugar, and chili flakes. Stir-fry everything together until well combined and noodles are heated through.
  5. Turn off the heat and mix in bean sprouts and green onions.
  6. Serve hot, garnished with crushed peanuts and lime wedges.

Notes:

  • Tamarind paste can be substituted with a mix of vinegar and sugar for a similar tangy flavor.
  • Vegetarians can substitute the protein with tofu and use soy sauce instead of fish sauce.
  • Adjust the level of spiciness with chili flakes to suit your taste.
