Ingredients:

  • 2 lbs ground beef
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 2 (15 oz) cans of kidney beans, drained and rinsed
  • 2 (14.5 oz) cans of diced tomatoes
  • 3 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 2 cups beef broth
  • Salt and black pepper to taste
  • Optional garnishes: shredded cheddar cheese, sour cream, chopped green onions

Method:

  1. Brown the Meat:
    • In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain excess fat.
  2. Sauté Vegetables:
    • Reduce heat to medium. Add the diced onion and minced garlic to the pot with the beef. Sauté until the onions are translucent.
  3. Combine and Simmer:
    • Stir in the beans, diced tomatoes, tomato paste, chili powder, cumin, smoked paprika, cayenne pepper, and beef broth. Season with salt and black pepper.
    • Bring to a boil, then reduce heat to low and simmer, uncovered, for about 1 hour 30 minutes, stirring occasionally.
  4. Serve:
    • Let the chili rest for 10 minutes after cooking. Serve hot with optional garnishes like shredded cheese, sour cream, and green onions.

Notes:

  • For a deeper flavor, consider adding a piece of dark chocolate or a splash of coffee towards the end of cooking.
  • Chili Con Carne tastes even better the next day as the flavors have more time to meld.
  • This dish freezes well, making it perfect for meal prep.
