Ingredients:
- 1 lb (450g) ground beef or turkey
- 1 small onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 4 large flour tortillas
- Optional toppings: salsa, sour cream, guacamole, chopped cilantro
Method:
- In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it up with a spoon. Drain any excess fat.
- Add the onion, bell pepper, and garlic to the skillet. Cook for 5-7 minutes, or until vegetables are softened.
- Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another minute.
- Add the black beans and cooked rice to the skillet. Stir to combine and cook for 2-3 minutes, or until heated through.
- Remove the skillet from heat and stir in the shredded cheese until melted.
- To assemble the burritos, spoon some of the filling onto a tortilla. Fold in the sides, then roll up tightly.
- Optional: Heat a large skillet over medium heat. Place the burritos seam side down in the skillet and cook for 2-3 minutes per side, or until lightly browned and crispy.
- Serve the burritos with your favorite toppings, such as salsa, sour cream, guacamole, and chopped cilantro.
