Ingredients:

  • 1 lb (450g) ground beef or turkey
  • 1 small onion, finely chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas
  • Optional toppings: salsa, sour cream, guacamole, chopped cilantro

Method:

  1. In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it up with a spoon. Drain any excess fat.
  2. Add the onion, bell pepper, and garlic to the skillet. Cook for 5-7 minutes, or until vegetables are softened.
  3. Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another minute.
  4. Add the black beans and cooked rice to the skillet. Stir to combine and cook for 2-3 minutes, or until heated through.
  5. Remove the skillet from heat and stir in the shredded cheese until melted.
  6. To assemble the burritos, spoon some of the filling onto a tortilla. Fold in the sides, then roll up tightly.
  7. Optional: Heat a large skillet over medium heat. Place the burritos seam side down in the skillet and cook for 2-3 minutes per side, or until lightly browned and crispy.
  8. Serve the burritos with your favorite toppings, such as salsa, sour cream, guacamole, and chopped cilantro.
