Total Time: 30 minutes
Serving: 4

Ingredients:

  • 8 oz chow mein noodles
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (such as bell peppers, cabbage, and carrots), julienned
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 cup chicken or vegetable broth
  • Optional: 1 cup cooked chicken, shrimp, or beef

Method:

  1. Prepare Noodles:
    • Cook the chow mein noodles according to package instructions until al dente. Drain and set aside.
  2. Stir-Fry Vegetables:
    • Heat vegetable oil in a large pan or wok over high heat. Add the onions and garlic, stir-frying until fragrant, about 1 minute.
    • Add the julienned vegetables and stir-fry for about 3-4 minutes until they are just tender.
  3. Combine Ingredients:
    • If using protein (chicken, shrimp, or beef), add it to the pan and stir to combine.
    • Add the cooked noodles, soy sauce, oyster sauce, sesame oil, and broth. Toss everything together and stir-fry for an additional 2-3 minutes until the noodles are heated through and evenly coated with the sauce.

Notes:

  • For a vegetarian version, omit the oyster sauce and substitute with more soy sauce or a vegetarian oyster sauce.
  • Adjust the amount of soy sauce and sesame oil according to taste preferences.
