Ingredients:

  • 500g beef stew meat, cubed
  • 500g okra, washed and trimmed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 cups water
  • Fresh cilantro, for garnish

Method:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Stir in the diced tomatoes, tomato paste, ground coriander, cumin, paprika, cinnamon, salt, and pepper.
  4. Add the water to the pot and bring to a boil. Reduce the heat to low, cover, and simmer for 1 hour, or until the beef is tender.
  5. Add the okra to the pot and simmer for an additional 30 minutes, or until the okra is cooked through.
  6. Adjust the seasoning if necessary, and serve hot, garnished with fresh cilantro.

Notes:
To reduce the sliminess of okra, you can soak it in vinegar or lemon juice for about 30 minutes before cooking.
