Preparation time: 15 min

Total time: 40 min
Serves: 4

Ingredients:

  • 2 teaspoons minced garlic
  • 2 teaspoons roasted onion flakes
  • ⅓ cup milk
  • 1 pound tilapia fillets, rinsed and dried
  • 1 egg
  • ½ cup Italian seasoned bread crumbs
  • 2 teaspoons butter
  • 1 teaspoon blackened seasoning
  • ¼ teaspoon freshly ground sea salt, or to taste
  • 1 ½ tablespoons olive oil
  • 2 pinches crushed red pepper flakes (optional)
  • ¼ teaspoon freshly ground black pepper, or to taste

Method:

  1. In a shallow bowl, whisk together the egg and milk. In another shallow bowl, combine the bread crumbs, roasted onion flakes, minced garlic, blackened seasoning, crushed red pepper flakes (if using), black pepper, and sea salt.
  2. Dip each tilapia fillet into the egg mixture, then coat it evenly with the crumb mixture on both sides. Place the coated fillets on a plate. Repeat the process with the remaining fillets. Refrigerate the coated fillets for about 15 minutes to allow the crumbs to adhere.
  3. Heat olive oil and butter in a cast-iron frying pan over medium heat. Place the fillets in the skillet and pan-fry until they turn golden brown on each side, which should take about 3 minutes per side. The fish should be opaque and easily flake with a fork beneath the crispy coating. Once cooked, transfer the fillets to a plate lined with paper towels to drain excess oil.

Notes:
When pan-frying the tilapia, ensure that the oil and butter are heated sufficiently before adding the fillets. This helps create a crispy exterior while keeping the fish moist and tender on the inside. Additionally, avoid overcrowding the pan to ensure even cooking and browning of the fillets.
