Method

  1. Prepare the Rice Mixture:
    In a large bowl, mix the cooked rice with Parmesan cheese, one beaten egg, salt, and pepper. Form a solid, cohesive mixture.
  2. Assemble the Arancini:
    Take a small portion of the rice mixture and flatten it in your hand. Place a tablespoon of ragù and a cube of mozzarella in the center. Carefully close the rice around the filling, forming a ball. Ensure the filling is completely enclosed.
  3. Bread the Arancini:
    Dip each rice ball first in flour, then in the remaining beaten egg, and finally roll them in breadcrumbs to coat thoroughly.
  4. Fry the Arancini:
    Heat oil in a deep fryer or a deep skillet to 375°F (190°C). Fry the arancini in batches until they are golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels. Let them rest for a few minutes before serving.
