Ingredients:

  • 1 tablespoon white sugar
  • 1 cup water
  • 1 tablespoon water
  • 1 cup milk
  • 1 packet (0.25 ounce) active dry yeast
  • 1 egg yolk
  • 1 ½ teaspoons salt
  • 5 ½ cups all-purpose flour
  • 2 tablespoons butter

Method:

  1. In a saucepan, combine milk, 1 cup of water, butter, sugar, and salt. Bring to a boil, then remove from heat and let cool until lukewarm. It’s crucial not to overheat the mixture, as it could kill the yeast.
  2. In a large bowl, mix flour and yeast. Pour in the wet ingredients and stir until the dough begins to form. If using a stand mixer, use the dough hook for about 8 minutes. Otherwise, knead the dough on a floured surface for approximately 10 minutes. Transfer the dough to a greased bowl, turning to coat. Cover and let it rise until doubled in size, roughly 1 hour.
  3. Punch down the dough and divide it into 12 portions, slightly larger than golf balls. Shape each portion into tight balls by pulling the dough tightly around and pinching at the bottom. Place them on a baking sheet lined with parchment paper or aluminum foil. Allow the rolls to rest for a minute and then flatten each ball with the palm of your hand until it’s 3 to 4 inches wide. You may want to oil your hands first. Let the rolls rise again until doubled in size, about 20 minutes.
  4. Preheat the oven to 400°F (200°C). In a small bowl, mix together the egg yolk and 1 tablespoon of water. Brush the mixture onto the tops of the rolls. Position two oven racks evenly in the oven.
  5. Bake the rolls for 10 minutes, then rotate them to different shelves in the oven to ensure even baking. Continue baking for another 5 to 10 minutes, or until they’re nicely browned on top and bottom.

Notes:
For an extra golden finish, consider brushing melted butter on the tops of the rolls right after they come out of the oven. It adds a lovely shine and a delicious flavor to your freshly baked rolls!
