Ingredients:

  • 1 cup firmly packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 3/4 cup unsalted butter, at room temperature
  • 1 large egg, at room temperature
  • 3-4 tablespoons milk
  • 1 cup dark raisins
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Method:

  1. Preheat your oven to 375 degrees F (190 degrees C) and prepare two baking sheets by buttering them or lining them with parchment paper.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Using an electric mixer or a hand mixer, beat the butter in a large bowl until smooth and creamy. Add the sugar and beat until soft and fluffy, about 2 minutes. Mix in the egg and vanilla extract, scraping down the sides of the bowl as needed. Gradually add the flour mixture to the batter, beating until fully incorporated. Add enough milk to create a soft batter, then mix in the raisins until combined.
  4. Drop about one tablespoon of batter for each cookie onto the prepared baking sheets, spacing them about 2 inches (5 cm) apart. Bake the cookies for 15 minutes, or until the tops are still soft with a slight color and the edges are golden brown. Remove from the oven and transfer the cookies to a wire rack to cool.

Notes:
