Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 carrots, sliced
  • 2 leeks, white and light green parts only, sliced
  • 2 stalks celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 bunch of fresh parsley, chopped
  • Juice of 1/2 lemon
  • 2 tablespoons butter
  • Salt and pepper to taste

Method:

  1. Prepare the Ingredients:
    • Clean and slice the vegetables. In a large pot, melt the butter over medium heat and sauté the onion, garlic, leeks, carrots, and celery until softened, about 5 minutes.
  2. Cook the Chicken:
    • Add the chicken thighs to the pot, season with salt and pepper, and pour in the chicken broth. Add the bay leaf. Bring to a boil, then reduce heat to a simmer. Cover and cook until the chicken is tender, about 30 minutes.
  3. Finish the Stew:
    • Remove the chicken from the broth and discard the skin and bones. Shred the meat and return it to the pot. Stir in the heavy cream and lemon juice, and heat through. Adjust seasoning with salt and pepper.
  4. Serve:
    • Ladle the Waterzooi into bowls and garnish with fresh parsley. Serve hot, accompanied by crusty bread or boiled potatoes.

Notes:

  • Waterzooi can also be made with fish instead of chicken, using firm white fish like cod or halibut.
  • For a lighter version, substitute half of the cream with whole milk or a light cream.
  • This dish is best enjoyed fresh but can be refrigerated and gently reheated for up to two days.
