Ingredients:

  • 5 large blood oranges
  • 1 ¾ cups white sugar
  • ½ cup cold water
  • 2 teaspoons fresh lemon juice, or to taste

Method:

  1. Start by thoroughly washing the oranges. Use a peeler to strip off all the zest in long pieces, even if some of the white pith comes along.
  2. Place the peels in a saucepan and add 6 cups of cold water. Bring it to a high simmer, then reduce the heat to medium-low. Let it simmer until the peels become soft and tender, which should take around 45 minutes to 1 hour.
  3. While the peels simmer, cut the oranges in half and juice them into a large measuring cup, aiming for about 1 cup of juice. Add 1/2 cup of cold water to the juice and set it aside.
  4. Once the peels are done, drain off the water and transfer them to a cutting board. Once they’re cool enough, slice the zest into very thin strips. Combine these strips with the blood orange juice.
  5. Now, pour the zest-juice mixture back into the saucepan, adding lemon juice and sugar. Bring it to a simmer over medium-high heat. Reduce the heat to medium-low and cook, stirring occasionally, until the mixture reduces and thickens slightly — usually around 30 to 40 minutes. You’ll know it’s ready when a probe or candy thermometer reads about 225 degrees F (107 degrees C).
  6. While the mixture cooks, inspect your jam jars for any cracks and rings for rust, discarding any defective ones. Immerse them in simmering water until the juice mixture is ready. Also, wash new, unused lids and rings in warm soapy water.
  7. Finally, pour the prepared mixture into sterilized jam jars and allow them to cool to room temperature. Seal the jars and transfer them to the refrigerator for at least 8 hours or overnight before savoring the delicious result.

Notes:
To enhance the flavor profile, consider adding a subtle touch of cinnamon or a hint of vanilla during the final stages of cooking the candied citrus peel. It adds a delightful depth to the overall taste.
