Ingredients:

Roast:

  • 5 pounds beef round roast
  • Salt and pepper to taste
  • 2 tablespoons butter
  • ½ cup water
  • 1 medium onion, sliced (Optional)
  • ⅛ teaspoon seasoning salt
  • ⅛ teaspoon ground pepper corns

Gravy:

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • ½ cup cold water

Method:

For the Roast:

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Season the roast generously with salt and pepper.
  3. In a pan over medium-high heat, melt butter. Brown the roast on all sides in the butter, taking about 6 to 8 minutes.
  4. Surround the roast with water and onion. Sprinkle seasoning salt and ground pepper corns over the top.
  5. Cover the pot and place it in the preheated oven. Bake until the roast is tender and fully cooked, approximately 2 hours for rare or 3 hours for well-done.
  6. Remove from the oven; transfer the roast to another pan and keep it warm. Reserve the pan drippings for the gravy.

For the Roast:

  1. In a medium pan over medium heat, melt butter. Whisk in flour until smooth. Remove from heat and add cold water, whisking until a smooth paste forms.
  2. Return to the stovetop over medium heat. Pour in the pan drippings. Simmer, stirring constantly, until the gravy thickens.
  3. Slice the roast and serve with the flavourful gravy poured over the top.

Notes:
Allow the roast to rest for a few minutes before slicing to ensure the juices redistribute, keeping the meat moist and flavourful.
