Ingredients:
Roast:
- 5 pounds beef round roast
- Salt and pepper to taste
- 2 tablespoons butter
- ½ cup water
- 1 medium onion, sliced (Optional)
- ⅛ teaspoon seasoning salt
- ⅛ teaspoon ground pepper corns
Gravy:
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- ½ cup cold water
Method:
For the Roast:
- Preheat your oven to 350 degrees F (175 degrees C).
- Season the roast generously with salt and pepper.
- In a pan over medium-high heat, melt butter. Brown the roast on all sides in the butter, taking about 6 to 8 minutes.
- Surround the roast with water and onion. Sprinkle seasoning salt and ground pepper corns over the top.
- Cover the pot and place it in the preheated oven. Bake until the roast is tender and fully cooked, approximately 2 hours for rare or 3 hours for well-done.
- Remove from the oven; transfer the roast to another pan and keep it warm. Reserve the pan drippings for the gravy.
For the Roast:
- In a medium pan over medium heat, melt butter. Whisk in flour until smooth. Remove from heat and add cold water, whisking until a smooth paste forms.
- Return to the stovetop over medium heat. Pour in the pan drippings. Simmer, stirring constantly, until the gravy thickens.
- Slice the roast and serve with the flavourful gravy poured over the top.
Notes:
Allow the roast to rest for a few minutes before slicing to ensure the juices redistribute, keeping the meat moist and flavourful.
