The rich, velvety texture of dark chocolate meets the vibrant flavor of freshly squeezed pomegranate juice, creating a harmonious blend of sweet and tart.

Ingredients:

  • 200g Dark Chocolate (roughly chopped)
  • 1 cup Pomegranate Juice (preferably freshly squeezed)
  • 2 teaspoons Gelatin (or agar-agar for a vegetarian alternative)
  • 1 ½ cups Heavy Cream
  • ¼ cup Granulated Sugar
  • 3 large Egg Yolks
  • A pinch of Salt
  • ½ cup Pomegranate Seeds (for garnish)

Method:

  1. In a small saucepan, heat the freshly squeezed pomegranate juice until it simmers gently, reducing it by half, about 10-15 minutes.
  2. Remove from heat and let it cool to room temperature.
  3. Fill a pot with a few inches of water and bring it to a simmer. Place the chopped dark chocolate in a heatproof mixing bowl and set it over the simmering water, creating a double boiler.
  4. Stir occasionally until fully melted and smooth. Remove from heat and let it cool slightly.
  5. In another saucepan, dissolve granulated sugar in ¼ cup of water over heat. In a mixing bowl, whisk the egg yolks. Slowly pour the hot sugar syrup into the egg yolks, whisking continuously to temper the eggs.
  6. Return the mixture to the saucepan and cook over low heat until slightly thickened. Remove from heat and whisk in the melted chocolate.
  7. Add the cooled pomegranate reduction and a pinch of salt to the chocolate mixture, stirring until well combined.
  8. Whip the heavy cream until soft peaks form, then fold it into the chocolate-pomegranate mixture.
  9. Dissolve gelatin in 2 tablespoons of warm water and fold it into the mousse mixture.
  10. Pour the mousse into dessert glasses or ramekins and chill in the refrigerator for at least 4 hours, or until set. Garnish with pomegranate seeds and, if desired, a mint leaf before serving.

Notes:
To ensure the chocolate melts smoothly and doesn’t seize, chop it into small, uniform pieces. This allows it to melt evenly and quickly when using the double boiler method.
