Method:

  1. Rinse the Rice:

    • Once boiling, reduce the heat to low and cover partially. Let simmer, stirring occasionally to prevent sticking, for about 1.5 hours or until the rice has broken down and the mixture has a creamy consistency.
  3. Season and Serve:
    • Remove the ginger slices and season the congee with salt to taste.
    • Serve hot in bowls, topped with your choice of optional toppings like shredded chicken, green onions, a drizzle of soy sauce, a few drops of sesame oil, or slices of boiled egg.

Notes:

  • The consistency of congee can be adjusted by adding more water during cooking for a thinner texture or cooking longer for a thicker consistency.
  • Congee stores well and can be refrigerated and reheated, adding a little water if it thickens too much upon cooling.
