  • 1 cup jasmine or short-grain rice
  • 8 cups water (or a mixture of water and chicken broth)
  • 1 piece of ginger (about 2 inches), peeled and sliced
  • Salt, to taste

Optional Toppings:

  • Cooked chicken, shredded
  • Green onions, finely chopped
  • Soy sauce
  • Sesame oil
  • Boiled eggs, sliced


  1. Rinse the Rice:
    • Thoroughly rinse the rice under cold water until the water runs clear. This helps remove excess starch and improves the texture of the congee.
  2. Cook the Congee:
    • In a large pot, combine the rinsed rice, water, and ginger slices. Bring to a boil over high heat.
    • Once boiling, reduce the heat to low and cover partially. Let simmer, stirring occasionally to prevent sticking, for about 1.5 hours or until the rice has broken down and the mixture has a creamy consistency.
  3. Season and Serve:
    • Remove the ginger slices and season the congee with salt to taste.
    • Serve hot in bowls, topped with your choice of optional toppings like shredded chicken, green onions, a drizzle of soy sauce, a few drops of sesame oil, or slices of boiled egg.


  • The consistency of congee can be adjusted by adding more water during cooking for a thinner texture or cooking longer for a thicker consistency.
  • Congee stores well and can be refrigerated and reheated, adding a little water if it thickens too much upon cooling.
