Ingredients:

  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup milk
  • 1 cup freshly chopped strawberries
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt (adjust to taste)
  • 2 tablespoons vegetable oil
  • 2 tablespoons vanilla extract

Method:

  1. Mix flour, brown sugar, baking powder, and salt in a bowl. Add milk, egg, oil, and vanilla; blend well. Mix in strawberries.
  2. Grease and heat a large skillet or griddle over medium heat.
  3. Drop spoonfuls of batter onto the griddle and cook until bubbles appear and edges are dry, around 2 to 3 minutes. Flip and cook until the other side is browned, about 2 minutes. Repeat with the rest of the batter.

Notes:
For fluffier pancakes, avoid over-mixing the batter. It’s okay if there are a few lumps – over-mixing can result in denser pancakes.
