Baked Chicken Wings

Crispy and flavorful baked chicken wings are so easy to prepare and you don’t have to bother with all the grease from frying!

Ingredients:

  • 4 pounds chicken wings, halved at joints, wingtips discarded
  • 3/4 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons baking powder (aluminum-free)

Buffalo Sauce:

  • 1 tablespoon water
  • 1 1/2 cups light brown sugar
  • 1/3 cup Hot Sauce

Method:

  1. Preheat your oven to 425 degrees F and adjust the rack to the upper-middle position. Line a baking sheet with aluminum foil and place a wire rack (such as a cooling rack) on top, spraying it with non-stick spray.
  2. In a large bowl, pat the wings dry with paper towels. Ensure they are thoroughly dried.
  3. Combine salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Sprinkle the seasoning over the wings, tossing to coat them evenly.
  4. Arrange the wings, skin side up, in a single layer on the prepared wire rack. Bake on the upper-middle oven rack, turning every 20 minutes until the wings are crispy and browned. The total cook time may vary but could take up to 1 hour depending on the wing size.
  5. Once done, remove from the oven and let them stand for 5 minutes. Transfer the wings to a bowl and toss them with the sauce.

For Buffalo sauce:

  1. In a medium saucepan over medium heat, stir together all sauce ingredients.
  2. Mix well until the sugar has dissolved.
  3. Remove the saucepan from heat and allow it to cool to room temperature before adding to wings (or prepare the sauce ahead of time and refrigerate).

Notes:
You must use baking powder that is aluminum-free (not baking soda) for this recipe to avoid any metallic taste in the recipe.
