Its origins trace back to the Cape Dutch, and it has become a comforting staple in South African households, especially during colder months.

Preparation Time: 20 minutes
Cooking Time: 35 minutes
Resting Time: 10 minutes
Total Time: 1 hour 5 minutes
Serving: 8

Ingredients:

  1. For the Pudding:
    • 1 cup all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 cup sugar
    • 1 egg
    • 1 tablespoon apricot jam
    • 1 tablespoon unsalted butter, melted
    • 1 teaspoon vinegar
    • 1 cup milk
  2. For the Sauce:
    • 1/2 cup heavy cream
    • 1/2 cup unsalted butter
    • 1/2 cup sugar
    • 1/3 cup hot water
    • 2 teaspoons vanilla extract

Method:

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C). Grease a medium-sized baking dish.
  2. Mix Dry Ingredients:
    • Sift the flour and baking soda into a mixing bowl. Add sugar and mix well.
  3. Combine Wet Ingredients and Bake:
    • In another bowl, beat the egg, then mix in the apricot jam, melted butter, vinegar, and milk. Combine the wet ingredients with the dry ingredients, stirring until smooth.
    • Pour the batter into the prepared baking dish and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Prepare the Sauce:
    • While the pudding is baking, combine the cream, butter, sugar, hot water, and vanilla extract in a saucepan over medium heat. Stir until the butter is melted and the sugar is dissolved.
  5. Finish and Serve:
    • Once the pudding is done, remove from oven and pierce all over with a fork. Pour the hot sauce over the hot pudding, allowing it to soak in.
    • Let it rest for 10 minutes. Serve warm with custard or vanilla ice cream.

Notes:

  • The key to a great Malva Pudding is the apricot jam, which imparts a distinct flavor. Ensure it’s well incorporated into the batter.
  • For a twist, add a tablespoon of orange zest to the batter for an added citrusy note.
  • Malva Pudding can be reheated, making it a perfect make-ahead dessert.
