Method:

  1. Prepare the Rice: Rinse sushi rice under cold water until the water runs clear. Cook rice with water in a rice cooker or pot. Once cooked, let it cool slightly.
  2. Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice and let it cool to room temperature.
  3. Assemble the Sushi: Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of rice over the nori, leaving a small space at the top. Place a few strips of cucumber, slices of avocado, and shrimp horizontally across the rice.
  4. Roll the Sushi: Lift the edge of the mat over the filling and roll it tightly. Use a little water to seal the end of the nori. Repeat with the remaining ingredients.
  5. Slice and Serve: Cut each roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger.
