Ingredients:

  • 4 cups chicken broth

  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1/2 pound chicken thighs, cut into pieces
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound mussels, cleaned
  • 1/2 pound calamari rings
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Lemon wedges and chopped parsley for garnish

Method:

  1. In a large paella pan or wide skillet, heat olive oil over medium heat. Add chicken pieces and cook until browned. Remove and set aside.
  2. In the same pan, add onion, garlic, and bell pepper. Cook until softened. Stir in rice, saffron, smoked paprika, salt, and pepper. Cook for 2 minutes.
  3. Add chicken broth and bring to a boil. Reduce heat to low, add chicken back to the pan, and simmer for 20 minutes without stirring.
  4. Add shrimp, mussels, calamari, and peas. Cook until the seafood is cooked through and mussels have opened, about 10 minutes.
  5. Remove from heat, cover, and let it rest for 10 minutes. Garnish with lemon wedges and parsley.

Notes:

  • It’s important not to stir the rice after adding the broth to achieve the coveted socarrat (crispy bottom layer).
