Ingredients:
- 2 cups short-grain paella rice
- 4 cups chicken broth
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1/2 teaspoon saffron threads
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 1/2 pound chicken thighs, cut into pieces
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound mussels, cleaned
- 1/2 pound calamari rings
- 1 cup frozen peas
- Salt and pepper to taste
- Lemon wedges and chopped parsley for garnish
Method:
- In a large paella pan or wide skillet, heat olive oil over medium heat. Add chicken pieces and cook until browned. Remove and set aside.
- In the same pan, add onion, garlic, and bell pepper. Cook until softened. Stir in rice, saffron, smoked paprika, salt, and pepper. Cook for 2 minutes.
- Add chicken broth and bring to a boil. Reduce heat to low, add chicken back to the pan, and simmer for 20 minutes without stirring.
- Add shrimp, mussels, calamari, and peas. Cook until the seafood is cooked through and mussels have opened, about 10 minutes.
- Remove from heat, cover, and let it rest for 10 minutes. Garnish with lemon wedges and parsley.
Notes:
- It’s important not to stir the rice after adding the broth to achieve the coveted socarrat (crispy bottom layer).
